will this grinder grind TURKISH fine ? I enjoy Turkish coffee , am looking for a grinder that will allow me to be able to buy a variety roasted beans and be able to grind for : Turkish , French press , stove top espresso , espresso and some drip . with simple adjustment of grinding wheel .

It's possible, but it's not reliable. There is a BUNN bulk (called the BUNN Bulk G3) grinder with a dial that can be modified with burrs designed for Turkish coffee, but it will make every setting finer. That means that it might not be suitable once modified for cold brew or maybe french press grinding. Hope this helps

what setting do you use for medium grind?

It depends on what you're looking for. This machine can grind for a variety of uses, so depending on what you're trying to brew for, you can probably find the setting that you need. The dial on the front turns to select the setting you'd like, so rotate from left to right to select anywhere from french press down to a pretty fine espresso.
